Ingredients:
4 boneless chicken breast halves, pounded to 1/4-inch thickness
salt and pepper
flour
2 tablespoons butter
2 tablespoon olive oil
1 clove garlic, minced
1/3 cup chicken broth
2 teaspoons vinegar
1/4 teaspoon dried parsley flakes
1/4 teaspoon dried tarragon
1 cup sliced mushrooms
Preparation:
Sprinkle the flattened chicken breasts with salt and pepper and lightly dust with flour.
In a large skillet over medium heat, melt butter with olive oil. Cook chicken with garlic until lightly browned, about 3 minutes on each side.
Add remaining ingredients; cover and simmer for 5 to 10 minutes, until the chicken is tender and cooked through. Serve chicken with the sauce.
